Directions

Step 1
First, let's make our falafel mix. Add parsley, chickpeas, garlic, cumin, salt, pepper, and flour to a food processor. Blend until a paste forms.
Step 2
Transfer mix to a bowl, cover and freeze for 45 minutes. You can also do this mix the night before and refrigerate.
Step 3
While the falafel mix is cooling, let’s make sweet potato fries. Preheat your oven to 400 degrees F. / 204 degrees C. Cut the sweet potatoes in the shape of fries. Add to a baking tray drizzle with oil and bake for 15 minutes, flip over and bake for 10 more minutes.
